With a little prodding from sarahrowe, I finally got around to starting on a New Year’s resolution. On Saturday I attempted to cook Pad Thai for the first time. It was yummy, but I overcooked the noodles so it was a bit mushy. On Tuesday, I cooked an amazing African Pineapple Peanut Stew – made with kale, pineapple, peanut butter, and hot sauce. It was really good served up with couscous with sundried tomatoes.
Emily, it’s supposedly West African “inspired”. Have you had eaten anything like that?
Sounds like Groundnut Soup
… if you take away the kale and pineapple and substitute some other ingredients. As far as I can tell groundnuts are peanuts (despite what some people say). The soup is essentially ground peanuts, tomato paste, onions, pepper (the chili kind), water and palm oil. It’s one of the five dishes I eat. I believe it’s supposed to have chicken mixed in somehow. I eat it with rice or boiled yams and often throw in garden eggs (like mini white eggplants) and mushrooms. Tasty! Emily

If you take away the kale and pineapple, there’s nothing left except peanut butter and hot sauce. I guess they’re similar though.

African Pineapple Peanut Butter Stew
The stew was awesome. Dad made it for supper. It calls for 1 tablespoon of tabasco, was that a typo!!! He used 1 teaspoon of that ‘Spontaneous Combustion’ sauce you bought him years ago and our mouths are still burning.

1 tablespoon is not a typo, and is fine amount if you use a normal hot sauce. That spontaneous combustion sauce is like 1000 times hotter than anything else. Silly dad.

Sounds like you’ve been cooking up a storm 🙂 You’ve made me proud! I’d love a copy of the African Pineapple Peanut Stew, sounds like an interesting flavour combination.. though I can’t really picture pineapple and peanut butter.
Can-Am society-ed it this evening. Good times though more verbose and less good food than I remembered from last year. Maybe we’ll lure you down for curling in the end of March.
